I'm not entirely sure what you mean by 'non-Unicode fonts'; are you
saying you have something
in digital format, but something that is not encoded in Unicode 8 ? If
so, it should be fairly easy
to convert it. Typesetting I feel is orthogonal to actually having the
text in digital form. OCR solves
the latter issue not the former.
